Beth specializes in helping those following special diets such as gluten-free, FODMAP or vegetarian/vegan diets by offering meal plans, recipes and shopping tours. In addition to counseling, Beth has worked for seven years teaching nutrition and cooking skills to children and adults throughout the community. Beth enjoys teaching and facilitating group discussions in the community to help people strategize and establish goals to overcome barriers to optimal health.
Beth is the mother of three grown children and has many life experiences from raising a busy family. She offers many tips and tricks to save time while providing the nutrition a busy young family needs. Originally from the East Coast, Beth and her husband have lived in Chicago for over 20 years. She has a previous degree in Hotel and Restaurant Management from the University of Massachusetts Amherst.
